Hahahaa ! You mean by drastically those two altered keyboard behaviors, the Undo and Constrain ? That's not a very drastic change, is it ? They turned them around by simply making the obvious action the easier option, and the exclusion the less easy option. And there are still occasions in which you need to use the old behavior, like with Shape layers.
It's better to ask why these actions started out on the wrong foot. But constraining a movement (like keeping rectangles and ellipsis constrained to perfect squares and circles) used to be with the shift key pressed when digital design started, back in the eighties. And when using brushes and other drawing tools, users once preferred to switch n back and forth between multiple steps.
But after decades, these preference have turned 180 degrees...
